This is a really excellent soup - easy to make and it makes a lot! I cut up the chicken before I put it in, rather than cooking it in the soup and then shredding it, and I added lots of veggies - mushrooms, carrots, celery and peas. I served it with a winter salad of endive, arugula and oranges, and it was a tasty lunch for a crowd. And it cooks up fairly quickly -just over an hour, which is quick for homemade soup.
